Serves 3
Ingredients:
1 can diced tomatoes with green chili (Do not drain.)
1 can white, black, or pinto beans (Do not drain.)
1/4 C creamed corn (Yes, creamed. This will add just the right touch of sweetness.)
1 C cooked ground meat
1 diced bell pepper
1 diced onion
1 diced garlic clove
1 bay leaf
1/2 Tbsp cumin
1/2 Tbsp chili powder
1/2 C water
salt, black pepper, cilantro, and red chili flakes to taste
Combine all ingredients in a pot. Bring to a boil and reduce to a simmer. Cover and simmer for at least 45 minutes.

I'd say forget the waffles and just go crazy eating this gorgeous chili, but that would be like saying to skip the frosting on a cake. They're good on their own but they make each other even better.

How to Make Cornmeal Waffles
Take your favorite regular waffle recipe. Substitute half the flour with cornmeal and throw in a sprinkle of seasoned salt, such as Season All.
If using a mix, like Bisquick, substitute half the mix with cornmeal.
When cooking, resist the urge to impatiently pull them from the waffle iron early. I know you want to eat them right now, but they taste best when they're nice and crispy.
Now the fun part.
On top of your waffle, place slices of cheese, such as Kraft singles, in a single layer. Top with hot chili, which will create a surprise deposit of cheesy goodness.
