With this 2-ingredient recipe, you can turn your favorite cake mix into your favorite pancakes. Pancake making at its finest.
While on your superhuman kick, you think I'm going to make my family pancakes for breakfast. Not just any pancakes - the best pancakes ever. I may even serve them as breakfast in bed! You pull out your favorite pancakes pan. Yeah, you're awesome sauce.
But oh no! You're out of eggs. No pancakes today, right?
I was once like you (minus all that junk about cleaning and organizing), dreaming of pancakes that could never be. Well, guess what? It turns out that you don't need eggs to make pancakes. No, you do not even need Bisquick. And your pancakes will actually be better for it.
2 Ingredient Cake Mix Pancakes
Serves 3
2 C cake mix
3/4 C milk
1/2 C water (Please don't tell me water counts as an ingredient. Come on.)
Easiest Directions to Make the Easiest Pancakes Ever
1. Measure the liquids into a bowl (or simply into an extra-large measuring cup - hooray for fewer dishes!) and then add the cake mix.
2. Stir everything together. The batter shouldn't be too thick or too thin - think of the consistency of all the traditional pancakes you've made over the years.
3. Let the batter sit for a few minutes. While waiting, spray your best pancake pan with nonstick spray and heat it on the stove on Medium. We like to use an enormous Lodge cast iron pan.
4. (Honestly, I think you guys can figure out the rest from here.) Pour or spoon the pancake batter onto the hot pan in your desired size/shape. After approximately 1 minute, bubbles should form. Flip the pancakes and cook for about another minute.
Ta da! You're done. Piece of (pan)cake, right?

Not surprisingly, cake mix pancakes are sweet like cake. You really don't need to add any syrup or mix in any chocolate chips. That said, fresh blueberries added to the batter? Heaven.
Which cake mix flavor makes the best pancakes? In this case, I think basic Yellow is the most similar to a typical pancake, although White is a close second. I've also had delicious results making this recipe with Funfetti and Betty Crocker Butter Pecan. Funny enough, as big of a chocoholic as I am, I've never tried this with Devil's Food, German Chocolate, or any other rich cake mix. I'm sure the results would taste amazing, but I don't think they would taste like pancakes.
Why Choose Egg-Free Cake Mix Pancakes?
This is my go-to pancake recipe, whether or not I have eggs. With the price of eggs currently sky-high, Cake Mix Pancakes are a no-brainer.
Egg Substitutes for Pancakes
Common egg substitutes for pancakes include mashed bananas, applesauce, yogurt, or, my favorite, ground flaxseed mixed with water. However, this recipe doesn’t require any substitutes, making it simpler and faster than most egg-free pancake recipes.
The Science Behind Egg-Free Pancakes
Eggs often act as binders in baking, but for pancakes, you can achieve similar results with a combination of leavening agents and the right batter consistency. This recipe cleverly balances these components for perfect pancakes.
Tips for Fluffy Egg-Free Pancakes
For extra fluffy pancakes, let the batter rest for a few minutes before cooking. This gives the baking powder present in the cake mix and the milk time to create air bubbles, which are key to achieving that airy texture.
Adjusting the Recipe for Dietary Needs
This recipe is versatile for various diets. Substitute regular milk with almond milk, oat milk, or soy milk to make the pancakes dairy-free. Use gluten-free cake mix for a gluten-free version.
How to Avoid Common Pancake Mistakes
Avoid overmixing your batter, which can make pancakes tough. Also, ensure your skillet or griddle is preheated to the right temperature. If it’s too hot, the pancakes might burn on the outside before cooking through.
Why Use Cake Mix for Pancakes?
Using cake mix is a clever hack for quick and consistent pancakes. The mix already includes a blend of flour, sugar, and leavening agents, which saves you time and guarantees delicious results.
Make-Ahead Pancake Batter Tips
Did you know you can prepare the batter in advance? Store it in the refrigerator for up to a day, and enjoy fresh pancakes in no time. Just stir gently before cooking.
